Waste Not Broken Biscuit Chocolate Fridge Cake

Broken Biscuit Traybake

So yesterday as I went to Google Broken Biscuit Tray Bake, and I suddenly remembered that I had written up this recipe and posted it to my original Waste Not Want Not website a hundred years’ ago! So I ended up Googling myself! I realised then that I needed to revisit some old favourites and share them again!

The reason I love this recipe so much is because it was one I used to make as a kid! My mum was never a baker, and this enabled us to knock something up in the kitchen without causing too much havoc, whilst also using up stale and broken biscuits into the bargain!

The great thing about it is, you can literally use just about anything you’ve got lying around, from Digestives, to those little Lotus biscuits you get in posh coffee shops – I always end up collecting them and then not knowing what to do with them! You can add anything extra you like too such as raisins, honeycomb and even marshmallow…it’s not a million miles from a rocky road or a classic tiffin, but the idea is you use something that might otherwise go to waste!

And this time around when I made it, I used the microwave method of melting my chocolate to top it off – just pop your chocolate into a microwave proof bowl, blast for 30 seconds, and then 10 second bursts until you can stir it and it melts completely. Easy peasy – less bowls, mess and probably less electricity too!

INGREDIENTS

  • Approx 1 packet (400g) of broken biscuits, practically any sort.
  • 1/2 a block of butter
  • 2 tbsp golden syrup
  • 2 tbsp cocoa powder
  • a block of chocolate to finish off

METHOD

  • Put the broken biscuits in a plastic bag, hand them to a child and get them to bash them to smash with a rolling pin. Sometimes I blitz half the pack as well as it tends to stick together better, but make sure you’ve got some lumpy bits too!
  • Melt the butter in a pan, add the golden syrup, cocoa and lastly the broken biscuits.
  • Mix together thoroughly.
  • Add some extras if you like – raisins for a bit of fruit, marshmallows for a bit of Rocky Road!
  • Line a brownie tin with greaseproof paper.
  • Pour it all into a tray and press down.
  • Put it in the fridge to cool.
  • When it is cool, melt the chocolate (we love it with a bar of Milky Bar) and cover over the top! Go crazy!
  • Allow chocolate to cool and cut into squares!
